White Cheese Chicken Casserole

I made this recipe for my family last night. I think it is one of the first recipes that everyone ate. It was delicious! I didn’t have all the ingredients that the original recipe called for so I substituted. Here is my modified version.

White Cheese Chicken Casserole Recipe

INGREDIENTS


  • 1/2 cup butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups chicken broth
  • 1 1/2 cups milk
  • 1 cup mozzarella cheese
  • 3 cup sharp white cheddar cheese
  • 1 cup grated Parmesan cheese, divided
  • 1 teaspoon basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoons ground black pepper
  • 4 cups egg noodles
  • 2 cups cubed cooked chicken meat

DIRECTIONS:


Melt the butter in a large sauce pan over medium heat, and saute the onion and garlic until tender.

Stir in the flour and salt, and simmer until bubbly.

Mix in the broth and milk, and boil, stirring constantly, for 1 minute

Stir in mozzarella cheese and 1/2 the Parmesan cheese.

Season with basil, oregano, and ground pepper

Remove from heat and set aside.

Preheat oven to 350F/175C.

Bring a large pot of lightly salted water to a boil.

Add egg noodles.

Cook for 8 to 10 minutes, until al dente, and drain.

Spread 1/3 of the sauce mixture in the bottom of a 9×13 inch baking dish.

Cover with 1/3 of the noodles, sharp white cheddar cheese, and chicken.

Layer with 1/3 of the noodles, 1/3 of the sauce mixture, and 1/3 of the sharp white cheddar cheese, and the rest of the Parmesan cheese.

Top with remaining noodles and sauce mixture.

Bake 30 minutes or until chicken is heated and cheese is melted.

 

NOTE:

You can substite mozzarella cheese for the sharp white cheddar. Also you could mix all the ingredients in a large bowl and then put it in the pan, then it would be mixed instead of in layers.
