Caramel Corn

What’s sticky, sweet, and delicious? CARAMEL CORN!!!! I made this recipe for the first time last winter and took it to a youth event. The kids loved it! I made some for my family also and it got all almost instantly! For a variety you can easily melt chocolate and drizzle it over the caramel corn. I hope you enjoy this snack as much as I do 🙂 !

  • 6 qts. Popped corn*
  • 1 C. Peanuts (optional)
  • 2 C. Brown Sugar
  • ½ C. White Karo Syrup
  • 1 C. Butter
  • 1 tsp. Salt
  • 1 tsp. Vanilla
  • ½ tsp. Baking Soda

 

  1. Preheat oven to 250°.
  2. Combine sugar, Karo, Butter, and Salt, and bring to a boil. cook slowly for 5 minutes, stirring frequently. Timing is important, do NOT overcook.
  3. Remove from heat, add vanilla and baking soda.
  4. Mix thoroughly.
  5. Pour syrup over freshly popped corn (and peanuts optional) which have been placed in a large container (I use a big Tupperware bowl [http://www.tupperware.com/thatsa-bowl-3730.html]).
  6. Mix thoroughly.
  7. Place on a large sheet pan or other large baking pans, feel free to use more than one.
  8. Place in oven for 1 Hour. Stir every 15 minutes.
  9. Let cool before putting a bowl to store.
  10. Enjoy!

*Use 5 quarts for a heavier coated popcorn and 7 quarts for a lesser coated popcorn.
